  • Pre-heat the oven to 180deg/gas mark 4. Mix all the dry ingredients together, then add the wet fruit and carrot and stir briefly with a fork, to combine.
  • In a separate bowl, beat the eggs and oil together, then add to the flour/fruit mixture and stir lightly with a fork.
  • You're not looking for a well-mixed texture, as muffins seem to benefit from the odd lump and bump.
  • Spoon into muffin cases (silicone versions are great) and bake for 20-25 minutes or until a wooden skewer comes out clean.
  • Try not to eat them all before they've cooled down.

Thank you! I made these muffins yesterday and my husband, mother, and I all enjoyed them very much! I might even add a few more raisins. Also, I substituted applesauce for 1/4 oil and the result was moist and very appealing.
