- olive oil spray (or brush)
- fork
- freezer bag (or airtight box)
- Air Fryer
Preparation
Prick the eggplant with a fork.
Place in air fryer tray. Drizzle with olive oil (or brush with brush).
Set the air fryer to "Air Fry" mode at 350°F/180°C and cook for 20 minutes! Turn the eggplant if necessary halfway through cooking.
At the end of cooking, remove the eggplant and place in a sealed freezer bag or airtight box for 10 minutes. Remove the eggplant and place on a plate.

And now your eggplant is roasted and peeled, perfect for making Baba ganoush, sauces and even breadcrumbs!
