Preparation

  • Step 1 - Eggplant caviar dip
    Cut the eggplant lengthwise. Score the cut side of the eggplants in a crosshatch pattern with a sharp knife, in lines about an inch apart. Pour some olive oil on top.
  • Step 2 - Eggplant caviar dip
    Sprinkle with salt, pepper and rosemary. Bake for 40 min at 410°F (210°C).
  • Step 3 - Eggplant caviar dip
    Remove all the inside with a tablespoon and mix with lemon juice, garlic and olive oil. Put in the fridge.
  • Step 4 - Eggplant caviar dip
    There you are, your eggplant caviar dip is ready !
