Eggplant caviar dip

Prepare this delicious dip as an appetizer ! Your guests will love it ! Dip some carrot sticks or toasts in it :-)

- Cut the eggplant lengthwise. Score the cut side of the eggplants in a crosshatch pattern with a sharp knife, in lines about an inch apart. Pour some olive oil on top.
- Sprinkle with salt, pepper and rosemary. Bake for 40 min at 410°F (210°C).
- Remove all the inside with a tablespoon and mix with lemon juice, garlic and olive oil. Put in the fridge.
- There you are, your eggplant caviar dip is ready !
