  • Eggplant caviar dip - Preparation step 1Cut the eggplant lengthwise. Score the cut side of the eggplants in a crosshatch pattern with a sharp knife, in lines about an inch apart. Pour some olive oil on top.
  • Eggplant caviar dip - Preparation step 2Sprinkle with salt, pepper and rosemary. Bake for 40 min at 410°F (210°C).
  • Eggplant caviar dip - Preparation step 3Remove all the inside with a tablespoon and mix with lemon juice, garlic and olive oil. Put in the fridge.
