Ingredients

Number of serving: 3
80g Arugula / Wild Rocket Salad

1 Hard-Boiled Egg

4 tsp Sunflower Seeds


50g Bacon Bits

6 tbsp Extra Virgin Olive Oil


Oil for frying bacon

Preparation

  • Peel and chop the eggs.
  • Dice the onion.
  • Heat oil and fry the bacon till golden brown. Drain and set aside.
  • Divide wild rocket leaves into 2 serving plates. Throw in chopped onions and drizzle the olive oil and balsamic vinegar.
  • Top with eggs, bacon and sunflower seeds and serve your Rocket Salad with Bacon Bits and Eggs in Extra Virgin Olive Oil and Balsamic Vinegar!
