Inchi kabin peranakan fried chicken

What is so special about this fried chicken is, it is fried twice!


Number of serving: 4
4 chicken thighs, cut into small pieces

4 teaspoon chilly powder

1 teaspoon turmeric powder

1 teaspoon brown sugar

1/4 teaspoon cinnamon powder

80-100 ml thick coconut milk

1/4 teaspoon black pepper

1/4 teaspoon fennel seeds

4 cloves

1/4 teaspoon cumin

6 shallots

1 teaspoon salt


  • 1.Pound black pepper, fennel seeds, cloves, cumin and shallots to a fine paste
  • 2.Marinate chicken with the paste and the rest of the items for at least 4 hours (overnight will be better)
  • 3.In wok, medium heat fry the chicken until it is 3/4 cooked.
  • 4.Just before you serve to your guest, using new oil deep fry the chicken for the second time. (the oil must be really hot)
