Roasted apricots, arugula and burrata on toast
Fancy a slice of toast with a hint of summer? Here's a simple recipe full of flavor: roasted apricots, arugula and burrata toast. Between the melt-in-your-mouth caramelized fruit with honey and rosemary, the peppery freshness of the arugula and the creaminess of the burrata, each bite is a real treat. Toasted bread as a base, a drizzle of olive oil, a touch of chilli pepper if you feel like it... and you've got a quick tartine, perfect for a light lunch. You can also add peaches or figs, depending on the season and your mood ;)

Preparation
Wash and halve the apricots lengthways.
Brown the apricots in a hot frying pan with a drizzle of olive oil.
After cooking for about 2 minutes, add the honey, dried rosemary, salt and pepper. Cook for approx. 5 minutes over medium heat and set aside.
In the same pan, brown the slice of bread for about 2 minutes.
Assemble the toast: Place some arugula on the bread, the honey-roasted apricots, pieces of burrata, a drizzle of olive oil and chilli pepper (optional). And voilà, your toast is ready :)
