Ingredients

• 1 clamshell baby spinach
• 1/3 cup julienned sun dried tomatoes, drained
• 1 cup whole wheat couscous, seasoned with garlic powder, salt, pepper, drizzle olive oil
• ½ red onion, diced
• 1 can (14 oz) artichoke hearts, diced
• 1/4 cup sliced kalamata olives
• 1 roasted red pepper, diced
• 3 TBSP Extra Virgin Olive Oil
• 2 TBSP red wine vinegar
• ¼ tsp pepper
• 4 oz crumbled feta cheese

Preparation

• Cook cous cous as directed. Combine all other ingredients, excluding feta cheese, and toss.
• Add hot cous cous to salad and toss together.
• Sprinkle feta cheese on top. Serve warm.
