Spinach couscous salad

1 clamshell baby spinach

1/3 cup julienned sun dried tomatoes, drained

1 cup whole wheat couscous, seasoned with garlic powder, salt, pepper, drizzle olive oil

½ red onion, diced

1 can (14 oz) artichoke hearts, diced

1/4 cup sliced kalamata olives

1 roasted red pepper, diced

3 TBSP Extra Virgin Olive Oil

2 TBSP red wine vinegar

¼ tsp pepper

4 oz crumbled feta cheese


  • Cook cous cous as directed. Combine all other ingredients, excluding feta cheese, and toss.
  • Add hot cous cous to salad and toss together.
  • Sprinkle feta cheese on top. Serve warm.
