2 ears worth of corn kernels

1 large tomato

1 medium cucumber

1 medium onion

A handful each of fresh basil

1 bag of spinach

1 clove garlic

1 tsp cumin

1/4 cup olive oil

2 tbsp red wine vinegar

1/2 tsp salt

Pepper to taste


  • Combine the vegetables, herbs, and garlic in a large bowl.
  • Toast the cumin for about 20 sec, then combine with the olive oil, vinegar, salt, and pepper to make the dressing.
  • Dress the salad.
