(?????? ?? ????): 2 ?????? ???????? ???? 3 ?????? ???? ??? ????? ???? ?????? ?? 1 cm, ????? ????????? ????? ????????? ????? ????????? ?? ???? ???????? ?? ???? ??????? ? ?? ??? ????? ??????? ?? ???????? ??? ???????? ?? ?? ????. ????????? ? ???? ???? ?????? ???? ??????? ? ??????? ???????? ???????? ? ???????? ?? ???????? ?? ???. ???? ?? ?????? ????? ?? ?????, ?? ?? ?? ??????? ????????? ?????????, ???? ????? ? 1 ?????? ?????? ? 1 ?????? ?????? ? ???????? ??????? ??? ??? ????? ?????? ???? ? ????. ?? ????????? ?? ??????? ?????? ?? ????????? ????? ?? ???. *??????? ?????? ?????? ?? ?? ??????? ?? ??????? ? ?? ?? ????????? ? ????? ???? ?? ?? ?????, ???????? ?? ?? ???????? ? ?????????. if it wasn't for electrolux's idea for steam cooking i'm not sure i would have ever tought to make chinese steamed dumplings. it turned out they are easy to make and very tasty. i have never tried chinese dumplings before, but it doesn't matter, these were delicious. dough - for 12-15 dumplings (recipe from here): 1 cup all-purpose flour 1/3 cup just-boiled water put the flour in a bowl and make a well in the center. add the water in a steady stream. when all the water has been added, you will have lots of lumpy bits. knead the dough in the bowl (it is not terribly hot) to bring all the lumps into one mass; if the dough does not come together easily, add water by the teaspoon. transfer the dough and any bits to a work surface, flour your work surface only if necessary, and then sparingly. knead the dough with the heel of your hand for about 2 minutes. the result should be nearly smooth and somewhat elastic. place the dough in a zip-top plastic bag and seal tightly closed, expelling excess air. set aside to rest at room temperature for at least 15 minutes and up to 2 hours, while you make the filling. filling (recipe combined from here, from the electrolux's book successful steam cooking and from the contents of my fridge): 200 ?? minced meat 1/3 courgette, peeled and coarsly grated 1/4 onion, very finely chopped 1 cabbage leaf, very finely chopped salt black pepper 1 tablespoon soy sauce 1 cm piece fresh ginger*, finely grated 1 garlic clove, minced fresh parsley, chopped a little olive oil mix the minced meat with the other ingredients. you can find instructions on how to assemble the dumplings here and here. shape the dough into rounded long cylinder. on a floured surface, cut the cylinder into circles. press palm down on each piece to form a flat circle. with a rolling pin, roll out a circular wrapper from each flat disc. place a tablespoon of filling in the center of each wrapper and fold the dough in half, pleating the edges along one side. heat water in a wok, place grid over it, spread some cabbage leaves over the grid and put the dumplings on them. cover and steam for around 20 ??????. dipping sauce (recipe from here): 2 tablespoons balsamic vinegar 3 tablespoons soy sauce 1 cm piece fresh ginger, finely grated a little olive oil mix all ingredients in a small bowl and use this sauce to drizzle over the dumplings along with some sliced red hot chilli pepper and some parsley, or to dip the dumplings in it. i had a little leftover of the filling so i added the rest of the courgette, 1 egg, 1 tablespoon breadcrumbs and 1 tablespoon flour and i made patties, something between these and these. you can make some of these with the rest of the cabbage. *you can cut fresh ginger in pieces and freeze it and then peel and grate it without defrosting when needed. related searches : Chinese
