BBQ Baked Beans
I’ve been making this baked bean recipe since I became vegan and don’t remember where I got it. It’s comfort food for the cold weather. You’ll love it! Saute 1 large onion in olive oil cooking spray. Combine the the onions and these ingredients in a 1 1/2 quart casserole dish: 1/2 cup bbq sauce, 1/4 cup maple syrup, two 16-oz cans drained pinto or navy beans. Bake covered at 325 for 45 minutes; take off cover and bake for 15 more minutes. After it is done, you can mix in some cubed tofu or tempeh.
