Busy times, easy cooking
Those of you who know me well know that my specialty is cooking large main dishes and stretching them into several different meals. I may have a ridiculously busy schedule to live by, but that doesn't mean we can't still have great homemade food!
On Tuesday I made a big batch of simple Italian Chicken - chicken breasts dipped in beaten egg, Italian seasoned breadcrumbs and pan fried until golden. I used half to make Chicken Parmesan for that night... On Wednesday we used most of the leftover chicken breasts for chicken sandwiches served on kaiser rolls with lettuce, tomato and a Spicy Cilantro Lime Mayo - 1/4 cup mayo, 2 tablespoons chopped fresh cilantro, 1 teaspoon fresh lime juice, 1 finely minced garlic clove and a dash of hot sauce (yum)! Here it is Thursday already and time for the last little bit of leftover chicken. How does a busy mom make another quick and easy dinner using only two leftover chicken breasts to feed a whole family you ask - easy, make Chicken Pasta Alfredo ... Alfredo sauce: 1 pint heavy cream1/2 cup (1 stick) unsalted butter, softened1 cup freshly grated Parmesan cheeseHeat heavy cream over low-medium heat in a deep frying pan, add butter and whisk gently to melt. Sprinkle in cheese, stir to incorporate. Spoon sauce over warm pasta topped with chicken breast slices, season with fresh ground pepper. It's extra good topped with some crisp bacon!
