Call for Guest Posts: My Best Vacation Ever!

Good morning!


Holy. Cow. It was 62 degrees when my Mom and I left for our morning walk! Those two crazy women walking around with their arms stuffed into their t-shirts so only their hands were visible? Yeah, that was us. It was ch-ch-ch-chilly!


Chilly for walking, but amazing for running. I continued on to run a mile and a half loop after my Mom and I said goodbye and, without the heat and humidity to hold me back, I made it home in record time. Take that, Monday! ;)


I fueled up with a well rounded breakfast.

Some Cheerios & Unsweetened Vanilla Almond Breeze for whole grains.

I’ve said it once, and I’ll say it again, unsweetened vanilla almond breeze is MADE for cereal. It. is. so. good!!! Do you eat a lot of cereal?

And hearty EarthGrains 100% Whole Wheat toast, slathered in some healthy fat & protein packed almond butter.

I have this weird thing where I have to swirl my almond butter perfectly on my toast – like icing on a cake. I know.

Oh, we can’t forget the freshness. One Pink Lady Apple to go. :D

Lunch is a fresh feast as well and stars a massive Vegetable Goat Cheese Salad!

In the mix:



Mixed greens
Spinach
Carrots
Roma tomatoes
Green onion
Celery
Sundried Tomato Basil Goat Cheese

Oh, I thought I’d take a picture of my salad pre and post shred. You see, I fill my salad containers up with lettuce and spinach, then take a pizza cutter to it.

Not only does it let me fit more vitamin-rich greens into my container, but the pizza cutter cuts the lettuce into bite sized pieces, which are much easier to eat. No face whipping pieces allowed.

Between the two dressings I have at work, Italian & Lite Raspberry Vinaigrette, I think I’ll go with the Italian today. It’ll compliment the zesty goat cheese and really jazz it up!

I also packed a HFCS-free, unsweetened apple sauce cup and a Cashew Cookie Larabar mini for snackies.
