Cauliflower and Dried Fenugreek Leaves(Kasuri Methi) Gravy

Cauliflower is an excellent source of vitamin C and dietary fiber.

Fenugreek leaves are enriched with minerals like Potassium, Calcium, and Iron.

Have used fenugreek leaves in dried form available in the market as Kasuri Methi it gives nice aroma and taste to whatever food it is added.




Ingredients:

2 cups - Boiled Cauliflower florets
¼ cup - Kasuri methi (as per individual taste can be added more)
2 - Onions
2 - Tomatoes
2 - Green chillies
1 tsp - Turmeric powder
1 tsp - Red chilli powder
1 tsp - Coriander powder
1 tsp - Cumin seed
1 tsp - Salt
1 tbsp - Oil

Boil cauliflower florets in hot water with ½ tsp of turmeric for 3 ? 4 min once cooked slightly drain off the water.

Soak kasuri methi in water (methi is completely soaked) for 5 minutes drain the water.

Heat the oil in a heavy-bottomed pan add cumin and let it splutter now add onion , green chili and cook till it softens.

Add tomatoes and kasuri methi and fry it for 2 min till tomatoes softens.

Add the red chilli powder, coriander, turmeric , salt add ¾ cup of water and let it cook.

Now add boiled cauliflower florets add ½ cup water and close the lid let it cook for another 4 min.

It can be served with roti any type of paratha, pulao.
