Cauliflower with Red Radish Leaves and Tomatoes

Using cauliflower as the main ingredient to create a side-dish? No problem. I would not say cauliflower is my favorite yet I find myself buying cauliflower almost every week. If I am not wrong about myself, I have developed a liking for cauliflower because of Aloo Gobi.



Sometimes,  steaming the florets simply brings out their natural sweetness. Other times, roasting them (to the point of caramelization) with spices brings a charred savory-sweetness to this vegetable.



Today, I cook it another simple way, pairing them with tomatoes and the some red radish leaves.

Cauliflower with Tomatoes and Red Radish Leaves

Ingredients: 1 medium cauliflower head, snip off the florets, blanched and set aside; 1-2 tomatoes, finely diced; radish leaves from a bunch of red radish (Note: rinse the leaves and stems thoroughly and snip them off in small pieces); 2 cloves garlic, finely minced; 1/2 medium onion, finely diced/sliced; 3-4 thin slices of ginger; pinch of cumin, fennel and turmeric powder; 1/2 tbsp curry powder; salt and pepper to taste



Directions: Heat some oil in pan, add cumin and fennel seeds and fry till fragrant. Add onions, ginger, then garlic and fry till aromatic. Add tomatoes and fry briskly.When tomato juice is released from the tomatoes, add in cauliflower florets and mix well. Add in 2-3tbsp of water, turn to low-medium heat, cover pan and allow it to simmer. When the cauliflower turn tender, add in leaves of radish, mix well. Salt and pepper to taste.



Red Radish, Red Globes: Radishes and their greens are excellent sources of vitamin C. Radish leaves contain almost 6x the vitamin C content of their roots and far more calcium and protein than the roots. Red  Radish is a very good source of the trace mineral molybdenum, potassium and folic acid. Daikons provide a very good source of potassium and copper. Fresh radish roots contain more vitamin C than cooked radish roots. Many enjoy them in salad, while I use fresh roots in my smoothie.
