Chicken Nihari
Ingredients
Chicken - 1 kg Onion - 2 medium sized, sliced Garlic paste - 1tsp Ginger paste - 1tsp Salt to taste Chilli powder - 1 and 1/2 tsp Yoghurt - 1 cup Cumin seeds - 1 tsp Cinnamon sticks - 2 Green cardamom - 3 Black pepper seeds - 4 Cloves - 4 Oil - 4 tbsp Water - 4 cups Lemon Flour - 2 tbsp Preparation: Pour oil on a large pan...Fry the onions for atleast 10 minutes till they becomes golden brown..Add the chicken pieces and fry them for few minutes till their colour changes and then add the ginger and garlic pastes..Add salt and chilli powder...Fry this for about 10 minutes...Add the yoghurt and cook till the moisture has dried...Now add 3 cups of water...Let this cook for atleast 30 minutes till the chicken is cooked and is tender...Grind all the spices together and add in to the curry..Cook on low heat..Mix the flour in 1 cup of water and add this to the pan...Now the curry becomes thick...Cook for another 5 minutes...
