Cilantro Lime Rice
I love Qdoba and Chipotle... It is one of my guilty pleasures. In my opinion, the rice makes the burrito or bowl! Here is my copy cat recipe- Great for a Mexican side dish or to kick up plain rice a notch. Enjoy!
Cilantro Lime Rice Ingredients: 1 teaspoon of butter or olive oil 3 teaspoons of chopped cilantro 2/3 cup of white rice 1 cup of water 1/2 teaspoon of salt 1 lime Directions: 1. In a heavy saucepan, heat oil or butter over low heat, stirring until melted. 2. Add rice and lime juice, stir for approximately 1 minute. 3. Add water and salt, bring to a full rolling boil. Cover, turn down to simmer until rice is tender and the water is absorbed (I would estimate about 25 minutes). 4. Add in the cilantro and fluff rice with a fork. related searches : Cilantro
