Cold Beet Root Soup with Campari and Orange Juice ice cubes
A creative, cold soup made from beet roots. The soup fits perfectly well the hot weather. A sip of Campari and the orange juice ice cubes give and exotic touch to the soup. Have a glass of fruity rose with it! Delicious! Preparation time: 5 minutes + several hours of fridging Cooking time: 60 minutes difficulty: easy Ingredients: 500 gram of beet root some ginger 2 onions a hand full of greens for soup 1 table spoon of lemon juice 4 table spoons of Campari some olive oil juice of 2 oranges salt and pepper Preparation: Press the oranges and fill the juice into an ice cube container. Place in the freezer. Clean the beet root very well. Then put it to boil in some water with the greens (celery, parsley, carrot, leek) for 30 minutes. The beet root should be soft by then. let it cool down, then peel it. Keep the water you boiled the beets in. Remove the greens though. Cut up the beets and put them back into the boiling water with some onion and approximately 2 cm of diced ginger. Let it boil until the onions are soft. Now puree it with a blender. Add some lemon juice, some olive oil, salt and pepper and fridge it for a couple of hours. Before serving the soup add some Campari. Put the soup into plates.
