Cold Carrot & Apple Soup
I love soups and I always try out various combinations with soups. This cold soup is prepared with carrot, apple, pineapple juice and orange juice. Definetly, apples with carrot gave a wonderful taste. Also, the fruit juices mixed with them gave a nice flavour. We enjoyed this colourful, healthy and delicious soup with toasted whole wheat bread. The soup with toasted bread makes up to a great meal in hot summer days. Ingredients : 1. Baby Cut Carrots - 3 2. Apple - 1/4 Cup (Chopped) 3. Onion - 1/4 Cup (Finely chopped) 4. Orange Juice - 3 tsp 5. Pineapple Juice - 3 tsp 6. Milk - 1 Cup 7. Vegetable broth - 1 Cup 8. Vegetable oil - 4 tsp 9. Pepper Powder - 1/2 tsp or adjust to your taste 10. Salt - Needed qty 11. Coriander - Little qty for garnishing 12. Toasted Bread (Optional) ![]() Procedure : 1. First of all, boil milk and refridgerate till it is completely chilled. 2. In a pan, add the oil. Then add the onion. Saute till it turns golden brown. 3. Now, add the chopped carrots and chopped apple (reserve little quantity for garnishing). Saute them for few minutes. 4. Add the pepper powder and salt. Mix them well with the contents. 5. Add vegetable broth and cook well till the carrot and apple turns soft. 6. Cool the contents and grind to a fine paste. 7. Mix this with chilled milk and thin out to soup consistency. 8. Now, add the orange & Pineapple juices. Mix well. 9. Garnish with reserved apple pieces and coriander. 10. Serve with a toasted bread.
