Man can not live by sugar alone.  That’s what it has seemed like living in our house the past week and a half.  My kitchen has been wall to wall chocolate, peanut butter, sugar, nuts, more sugar and more chocolate.  Ebarrassing as this is to admit, we’ve had to do takeout a couple of nights because my stove was completely covered in some sort of Christmas candy making process.  But now I am officially done and have put all of the candy stuff away.


The weather has turned cold here in LA.  Yes, I know you’re saying “oh boo hoo,” because it dropped below 50 degrees.  But whatever, it’s still cold.  So when it turns cold, I immediately think soup.


This past summer, we went to Boston and had the most fantastic lobster corn chowder.  It was so good we went back for more the day of our flight and almost missed our plane (totally would have been worth it).  I’ve been thinking of it ever since.  Unfortunately, we just don’t get those good East Coast lobsters here.  And by the time they get flown in, they just don’t taste as fresh.  Time to improvise with crab.


Because of the eating frenzy that is the holidays, I made this soup recipe creamy but without the gallons of milk and/or heavy whipping cream.  And I’m pretty sure that most people wouldn’t even miss it.


Relationship Advice


Just because you are making something less fattening, does not give you carte blanche to rub it into your significant other that you are making it less fattening because they could stand to drop a few…get in shape…eat better.  Odds are that he/she already knows these things and doesn’t need to hear it from you – the one person that supposedly loves him/her no matter what.  They don’t need to know anything about the dish that you’ve prepared other than you have made this for them because you know that will really like it.  It should be enough that you know that you are helping them to become healthier and that you really did make it for him/her because you love them.


Constantly nit picking or referencing your significant others short comings only makes them start to dislike you.  It builds up walls between you.


Serves 4-6


Ingredients



32 Ounces Chicken Broth
2 Medium Baking Potatoes (peeled and diced)
3 Small Cloves Garlic (chopped fine)
1 Teaspoon Old Bay Seasoning
1/4 Cup Grated Brown Onion
12 Ounces Frozen Corn Kernels
1/4 Teaspoon Cracked Black Pepper
1/4-1/2 Cup Whipping Cream
1 Tablespoon Unsalted Butter
8 Ounces Crab Meat
Kosher Salt

Directions


In a large saucepan add the diced potatoes and garlic.  Pour in chicken stock.  Over medium high heat cook potatoes until just starting to soften (10-15 minutes).


Add Old Bay seasoning, onions, black pepper and corn to saucepan.  Stir and let simmer for 15-20 minutes.


Stir in cream and add butter.


Once butter melts, add crab to mixture.  Stir to thoroughly combine ingredients and leave on heat until crab is heated through.


Salt to taste.
