Cous Cous Stuffed Pepper

This is a Mediterranean recipe which I would like to share with you today.

This kind of dish is pretty healthy and is generally loved by the women and by me too!

It's fresh and it can be prepared in advance.





for 2 people, suitable for vegetarians



2 big peppers

80 g of cous cous

12 cherry tomatoes

12 black olives

1 teaspoon of capers

6 sundried tomato 

40 g of feta cheese

1\2 onion

1 mixed table spoon of basil + mint + oregano

salt and pepper

1\2 teaspoon of sugar

1 table spoon of e.v. olive oil







Preheat the oven to 190°C.

Place the cous cous in a bowl and add a mug of boiling water, stir, cover and rest it for 5 minutes.

Meanwhile,  chop sundried tomatoes, cherry tomatoes, olives, feta cheese and onion and mix the ingredients altoghether.

Taste to check if you need to add salt or pepper.





Add the cous cous and stir well.







Now let's prepare the peppers.

Cut the stems and the top half inch off the peppers and scoop out the seeds and the membranes. Boil the peppers for 5 minutes, then drain them upside down.


Place the  peppers in a baking tray and fill them with cous cous you have done before.

Bake them for 20 minutes.

Ready!




Questa è una ricetta molto amata dalle donne, me compresa! E' di facilissima realizzazione, è più veloce di quel che si possa credere e quando arriva in tavola puoi contare sul fattore wow!



per 2 persone, vegetariana



2 peperoni

80 g di cous cous

12 pomodori ciliega

12 olive nere

1 cucchiaino di capperi

6 pomodori secchi

40 g di feta

1 cipollotto dolce

basilico, menta e  origano

sale e pepe

una puntina di zucchero

olio d'oliva



Per prima preriscalda il forno a circa 180°C, dopodiche prepara il cous cous, secondo le indicazioni della confezione.

In linea generali si fa così: metti il cous cous in un recipiente e aggiungi una bella tazza di acqua bollente, gira e lascia riposare coperto per 5 minuti.

In un altro recipiente adesso metti  i pomodori tagliati a metà, i capperi, fettine sottili del cipollotto, la feta sbriciolata, le olive nere, i pomodori secchi spezzettati.

Riprendi il cous cous e separa i grani aiutandoti con un filo d'olio e la forchetta, adesso puoi mescolarlo a tutte le verdure. Unisci le spezie, la puntina di zucchero, olio e assaggia (già è buonissimo così!)

Lava i peperoni, togli la calotta, elimina semi e filamenti. Riempili con il cous cous, se vuoi la crosticina aggiungi un pò di pan grattato o parmigiano ed inforna per una 20  di minuti.

Il pranzo è servito!
