Crispy pyala chat
1/2 kg Chickpeas 1/2 cup Lentils 1 tsp Turmeric 2 Potatoes Pastry strips for servingOil for fryingSalt as required
Ingredients For Green chutney 1/2bunch Coriander 1/2bunch Mint leaves 5-6 Green chilies 1/2 cup Tamarind paste 2 tbsp SugarSalt as requiredIngredients For special masala 1/2bunch All spice 2-3 Pepli 2 tbsp Whole black pepper Ingredients For garnishing 1/2 cup Chopped onions 1/2 cup Chopped tomatoes 1/2 cup Chopped coriander 1 cup Yogurt Chat masala as requiredDirections In a grinder grind together the peppery, black pepper and all spice. The special masala is ready.Method for green chutney,In a blender blend together the coriander, mint leaves, green chilies, tamarind paste, sugar and salt. The green chutney is ready to serve.Method for preparing the chickpeas,Soak the chickpeas overnight with 1tsp baking soda.In a large pan boil together the chickpeas, lentils, salt and turmeric. Boil until the lentils and chickpeas are tendered.When a little water remains add the boiled potato cubes and cook for a further1-2 minutes.Method for making the pyala,Heat oil in a wok. Place a pastry strip in a sieve. Cover the sieve with another one and deep fry it.Repeat with the other strips.Method for serving,Fill the pastry strips with the chickpeas and sprinkle the chat masala on top.
