Dairy & Egg Free Chocolate Cupcakes
I am always curious to try and bake a cake with no butter or eggs. Curious to see how such a mix of ingredients will work. I am not vegan but I do like recipes that a very quick to make and this certainly was. Not as good as Best Ever Chocolate Cupcakes simply because they tasted quite plain without the frosting. Here it is naked without its topping to show that it rises into a nice shape quite well. If you would prefer to cook this recipe as a 20cm cake see Fudgy Chocolate Cake Ingredients:(makes 24 cupcakes) 3 cups self raising flour 2 cups sugar 2/3 cup cocoa 2 cups water 2/3 cup canola oil 2 tbsp white vinegar 2 tsp vanilla Method: place all ingredients into mixing bowl and whisk until smoothline 1/3 cup muffin tray with cupcake papersspoon mixture until 2/3 fullbake at 160c fan forced for 20-25 minutesWill show you some different icing /frosting options in the next post.
