Eggless Chocolate Zucchini Bread
Zucchini are low caloric vegetable, even peoples who are in diet are extremely adviced to take zucchini during diet everyday coz of their low calories, this zucchini is a versatile vegetable, they can turn out as any dishes from appetizier to cakes...whenever i saw zucchini, i wish to prepare them as bread with chocolate but everytime i finish them very soon, this time my H bought two bags of zucchinis while he went for shopping as they were dead cheap..this time i want to prepare chocolate zucchini bread as eggless version..i used corn flour, condensed milk to make this eggless delicious zucchini bread..This is my one more entry to Egg Substitute-Yoghurt by Madhuram of Eggless Cooking..
1cup Whole wheat flour 1/2cup Corn flour 1/2cup All purpose flour 1cup Grated Zucchini 1/2cup Condensed Milk (sweetened) 1/4cup Packed brown sugar 1/2cup Canola oil 1cup Yoghurt 1tsp Baking powder 1/2tsp Baking soda 3tbsp Dark chocolate powder 1/4cup Almond flakes Mix the whole wheat flour, corn flour, all purpose flour,chocolate powder with baking soda n baking powder, keep aside..Preheat the oven to 350F..now whisk together the condensed milk, brown sugar, canola oil and yoghurt until the sugar get dissolved n the mixture turns soft...add gradually the flour to the wet ingredients until everything get well mixed...now add the zucchini pieces to the flour mixture and fold gently, dont over beat it..grease a loaf pan n pour the batter n springle the almond flakes over the batter.. Bake for 35-40minutes until the skewer inserted in the middle come out clean..Once out of the oven, let them cool for few minutes.. Slice the bread as per ur need n enjoy!!
