Everyday Eats-Cold Weather Edition
Every now and then I check my "blog photos" folder on my desktop and realize there's lots of meals I've eaten and photographed, but not blogged about. So here is some of it (some is quite recent, others a little older, but all within the last 2 months). First up Sausages with Caramelized Onions and Mashed Potato. The onions were caramleized in a little red wine if I remember correctly and were delicious (I wish I could remember where I got this recipe! I'll have a hunt in my folder and see if I can find it): I made some meatballs using this recipe here. I didn't use the sweet and sour sauce though. Instead I cooked them in the sauce from Kurma's Juicy Curd Steaks. They were kind of dry, but I think with some experimenting they could work. They tasted nice. I made some Smashed Potato Enchiladas from write.cook.listen. They were awesome. Make them! I used Mainland Colby Cheese because we don't get Monteray Jack Cheese in Australia. I also topped them with some avocado mashed with a little lime juice and some sour cream. (And that's steamed sugar snap peas in the background. Weird I know, but I need greens with every meal almost!) One night I made Shepherds Pie. I started with this recipe, but got distracted and in the end my version had some red wine, tinned tomatoes, double the herbs (plus some extra's), no peas but corn and some carrot too. I also threw in a tablespoon or 2 of Gravox Supreme (which is vegan, yay!) This week Lauren sent me my testers copy of Vegan Yum Yum. So from it I have made Corn Fritters: (served with Celeriac Puree, roasted Sweet Potato Chips and Roasted Asparagus) and Italian Rice and Beans, I used Red Kidneys because I had some leftover from the night before and also threw in my new favourite seitan sausage, which is the spices from this one but using Julies recipe as a base (I highly recommend you try these! I'm happy to put up a recipe if you want, just ask :)) The seitan went amazingly well with the Rice and Beans! Also, I double the spinach, because I love my greenery! And for a quick deviation from food. I went to water UnVegette K's tomato plant the other morning and on it was the teeniest tiniest praying mantis (I think) I've ever seen! Look! How adorable is he?!?! to get some idea of his size, here he is with my index finger (excuse the fact that I need cream and nail polish remover!) Awwwwwwww!!! Sorry I don't have a lot of actual typed out recipes! I've mostly been cooking from other recipes and adapting like mad lately. I'll try to have some soon!
