Food, food, Glorious Food :)

I have no idea why, but I have such a fascination with food! I love whipping things up sans recipe to create unique and wonderous dishes. I especially love to cook alongside the seasons, and fall is one of the best seasons for great food. You can’t go wrong with apples, pumpkin, and corn. (Not mixed together, however…grosss).


As I teased you with before, I shall recap my wonderous quick and easy breaky:

Baked Apple Cinnamon-Raisin Toast



1 Slice Ezekiel Sprouted Grain Cinnamon Raisin Toast
1 Apple
1 Tsp Honey
1 Tbsp Cinnamon
1 Tsp Earth Balance

This is so simple which is why it is so genius 8)


Directions: Slice apples, spread on baking tray, sprinkle with cinnamon and honey, and bake in the oven for 5-10 minutes until soft but not too mushy (depends on the type of apple) in a 350 degree oven. Meanwhile, toast the slice of bread.Take a minute to enjoy the smell of baking apples :D . Once ready, spread earth balance on bread and then place the slices on the toast. Drizzle with extra honey and cinnamon if desired. Enjoy!

I kind of like dark mornings! Not all the time as it makes it super difficult to get out of bed in the mornings, but sometimes I find it so relaxing. I like to drink my tea and do a crossword as the sun rises. I find it is a great way to reset my mind and head to work fully energized and in a great mood, ready to be creative and productive!


On to more food (hehe):


It was taco night for dinner tonight! We haven’t had tacos in so long that we decided to finally get ‘er done! I didn’t manage to take many pictures because:



I was stuck in traffic on the way home. What takes me 15 minutes took me 1 hour and I was STARVIG. Therefore, pictures were too time-consuming…hunger brings the worst out of people :(
The taco shells wouldn’t stand up :( . I made a mess trying to get a snap of a fully loaded taco shell. Womp womp.

I had leftover chicken from last night with mine, and the bf had some extra lean ground beef pan fried up with the taco seasoning that came from the kit. P.S. I am amazed and super excited that Old El Paso now has healthier versions of their taco kits! Usually I had to buy separate whole wheat tortilla shells for my tacos and regular ones for the bf. The new kits have less sodium (yesss!) and the shells are made with whole wheat (double yess!!!)

Sorry it is blurry, I took these from my iPhone to save time so that I could eat sooner. haha I am silly. Anyways, I sauteed some red onion, red bell pepper, and mushrooms in a small amount of olive oil. I then added the shredded chicken from the roast I made last night. Then I sprinkled some Tex Mex Seasoning (the McCormick kind) and some Cayenne pepper. Then I sprinkled some fresh lemon juice… the juice of 1 half of a lemon. I stirred away until the onions were nicely caramelized and the chicken was slightly charred. I like charred chicken in Mexican-type dishes for some reason.

muahahah… I made a masterpiece. This was an absolute new fall favorite. (Next to creme caramel of course).


I have to go but I promise I will show you what I did with these gooey-crunchy apples and how I did it. Don’t drool on the keyboard please :P
