Hearty meals

Hello everyone!
I hope you are all doing well. I miss blogging every day but unfortunately, my job is taking time away from leisurely blogging. I guess I have to be thankful that I am busy enough so not to have time to blog...but I miss it, and I miss the comments, and
feed back that I always get from all of you.

So, let me tell you what I have been up to...unfortunately, I have not been keeping us with my gym work outs. The work schedule has messed up my routine and I am having trouble finding my grove again...however, due to less physical activity, I have been careful about what I eat. I do not know but I love hearty meals during winter time!

Let me show you!

Winter= zucchini


Zucchini = whole wheat pasta


zucchini and pasta= ricotta


All the above = an Italian favorite!

By the way, if you are ever low on ingredients in the kitchen, veggies and pasta are always a great combination. Add some ricotta (none of that non fat stuff...they contain more chemical ingredients...stay away from it!) and you will have a great meal! Believe me.

Winter also means a hearty breakfast. Mine never fails!


However, today I was inspired by the winter-hearty-meals cravings and decided to make split peas soup. I just sauteed some onions and garlic, added carrots and the split peas and drowned them with water... I cannot wait to slurp on it tomorrow at lunch!
Now, as for the rest of my life...I have been working on a huge case, filed in federal court! I am really excited about it and I am also very nervous about it, but I like a challenge...I am very Elle Woods when it comes to my legal life! Couple things that are worth celebrating this week...

# 1: I helped a woman who was recently diagnosed with cancer. Myself, and two other friends went to her home and cleaned it for her, cleaned the fridge, washed some fruits, prepared her something to eat and kept her company....

#2: The police has agreed to certify the application for a U-visa for a client of mine! So excited that I will be able to move forward.

#3: My brother is coming to visit me for 3 weeks. I cannot wait! I am so excited that I want to stay awake the whole time he will be here, so I will not miss one second of his time here!

#4: I found a piece of Italy, true Italy at Costco!


#5 : I got rain boots! Not just rain boots...Burberry Rain Boots! Hold on...no! I did not spend $250 on them....I have been wanting them for such a long time..but I could not bring myself to spend that much money for plastic shoes. So, I was at Nordstrom's Rack and I found them for $50!!!


#6: I took a kickboxing class with Eric and LOVED IT! I died...truly died...but loved it! So we decided that we are going to sign up for it because it is high intensity, lots of calories burned and a different work out! Totally excited! Plus, it is only $5 a lesson, for 8 weeks! YEAH!!!!
