Idli Podi / Idli milagai podi
Idli milagai podi is a spice powder which can be used as a side-dish for idli and dosa. This podi is inseparable from south-indian kitchen. I use this podi when ever i am not in a mood to prepare chutney/sambar to idli or dosa. Just a spoon of this podi with gingely oil makes it perfect with hot idlis. And this recipe is from my MIL...
You will need : channa dhal : 1 cup urad dhal : 2 cups corriander seeds : 1/4 cup red chilli : 15 to 20 depending on your taste and hotness of the chillies asafoetida : 1 sp salt : as per taste Methiod : drt roast everything till you can smell a nice aroma. cool and grind everything into a coarse powder. cool and store in air tight containers. tip : fry the dhals on a medium flame till they are reddish brown in color. this enhances the color of the podi.. related searches : Idli
