Lamb Burger
Weekends here, so is the time for junk food. Come every friday and you will find chips, burgers, pakoras, vadas, tikkas and all sorts of finger foods turned into supper/dinner. This is my way of diverting the juniors mind from the good old Macca's Hungry Jack and KFC's for some healthy junk food........healthy junk......is there anything like that???? thinking.....may be in every mum's kitchen. This is my way of making up with sum lean lamb mince....thanks to my fantastic butcher.....with the famous Aussie caramalised onions. Ingredients: Lean lamb mince 500 gms Onion 1 (large, finely chopped) Garlic 2-3 cloves (roughly chopped) Coriander/Cilantro 1 cup (finely chopped) Cummin/Jeera powder 1 tbspn Green chillies 2-3 (finely chopped or optional) Mint 1 cup (finely chopped) Salt and pepper as per taste Olive oil for shallow frying Hamburger buns Mayonnaise Dijon /American mustard Tomato ketchup Sliced cucumber Lettuce Optional: Onions Beetroot Tomatoes Caramalised onions: Onion 2 (sliced) Brown/raw sugar 1 tbspn Balsamic vinegar 2 tbspn A pinch of salt Method: Mix all the burger ingredients except oil and keep aside, for the spices to mingle with the meat.Make patties of desired size and shallow fry in a hot pan with olive oil on a medium heat.After both sides are colored, place the patties in a hot oven for 5-8 mins on 150oC......until fully cooked.For the caramalised onions, take a pan and add a tspn of oil. When hot throw in the onions and saute until coated with oil. Go not color or cook the onions.Add the balsamic vinegar and saute for a min. Then add the sugar and saute again until caramalised...whilst stirring continously on high flame. Remove from the hot pan and keep aside. It is important to do so or else the onions will keep cooking in the hot pan.Arrange the burger as required. I spread the mayo on both sides of the bun with the mustard. Then start building first with the lettuce, cucumber, the patty, a slice of cheese and then the onions.......voila a huge burger is ready to grab. PS: If you are not a lamb lover, change the meat....chicken/beef/pork...whatever you like. Or if not a meat eater at all...how about a big peice of tofu grilled with sum chilly flakes. Or how about halloumi grilled with oil and chilli ......this one is to die for.....variations are endless one can think off. related searches : Lamb
