Mushroom Biryani/Spicy Mushroom rice
Ingredients Basmati rice 2 cups(soak for atleast 20-30 minutes)Mushroom 1 pack(i used sliced mushrooms)Onion 2no.s(sliced)Tomato 1 no.(chopped)Green chillies 5-6 no.s(slit open)Ginger -Garlic Paste 2 tbspMint leaves 1/2 cupCoriander leaves 1/4 cupThick curd/yoghurt 2-3 tbspBread 2 slice(toasted and cut into small pieces)To Temper Oil 3 tbspGhee or butter 1 tbspshahi Jeera/Black Cumin 1 tspBay leaf 2 leavesClove 5no.sCinnamon 2 sticksCardamom 3-4 no.sMethod Heat oil and ghee in a non-stcik vessel or pressure cooker,add all the tempering ingredients one by one and allow to splutter.Then add the sliced onions and green chillies,sprinkle some salt and saute well.Fry the onions till it get half transparent and add ginger garlic paste.Saute well till the raw smell leaves.Then add the mint leaves(spare some leaves) and fry a minute.Then add the chopped tomatoes and coriander leaves and fry untill tomaotes get soft .Now add the mushroom pieces and stir well.Add 2-3 tbsp of fresh curd and stir well,fry everything for 2 minutes.Now add the soaked and drained basmatic rice and mix well.Fry the rice nicely for 2-3 minutes ,stir gently don't broke it.Then add necessary water to cook rice,also add enough salt and mix well.Check salt and add the spared mint leaves and some coriander leaves and proceed cooking till rice is done.ORTransfer the entire content to a microwave safe vessel and cook for 20 minutes (or based on ur microwave power and the quantity of rice u cook).Once the rice is done add the toasted bread pieces to the biryani and mix gently and close the biryani with lid and stand for 2-3 minutes.After 3 minutes the biryani is ready to serve hot with raitha or any veg curry or non veg gravy also.Try this,spicy and flavorful yummy Biryani. related searches : Mushroom
