
Orecchiette is the typical pasta of Puglia in the southern region of Italy. This dish traditional is prepared with pork sausage but I substituted turkey sausage to reduce the fat. Feel free to use pork as it does have a richer flavor. Don?t be afraid to use anchovies. First of all if sauteed properly, the anchovies will melt and no one will know that they are in the dish. Everyone will ask what that delicious unusual taste is? You can tell them if you wish. I have spent over 25 years cooking for my finicky husband who loves Orecchiette w/Sausage & Broccoli Rabe and he still doesn?t know that anchovies are in it.There is no substitution for the delicious bitter taste of broccoli rabe in this Puglian speciality so don?t even try.INGREDIENTS:: ? 1 tablespoon olive oil ? 5 cloves garlic, smashed ? 4 anchovies ? 8 ounces turkey or pork sausage (casing removed) ? 1/2 teaspoon red chile flakes ? 1 bunch broccoli rabe ( about 14 oz) ? 1/4 cup Romano cheese ? 1/3 cup fresh bread crumbs (toasted)DIRECTIONS:: Heat the olive oil in a skillet over medium heat. Add chicken, peppers, mushrooms, and garlic. and cook just until the chicken is tender, about 5 minutes.
