Cleaned Up Veggie Quiche
Ingredients:
3 organic brown eggs
3 organic brown egg whites (this reduces the fat and calorie content of the dish)
1/4 cup of chopped onion
1/4 cup chopped carrots
1/4 cup chopped green peppers
1/4 cup of chopped broccoli
1/4 cup of chapped mushrooms
3/4 cup of organic non-fat milk
2/3 cup of low fat cottage cheese (I use Daisy brand 2% cottage cheese so far its the cleanest I have found)
1 tsp of ground garlic
Salt and Black Pepper to taste

Preheat oven to 350 degrees
Chop all ingredients that require chopping in food processor so that size and texture of veggies is consistent. Place chopped ingredients in medium sized mixing bowl. Blend cottage cheese in food processor so that its texture becomes more like ricotta cheese - there will still be some lumps but for the most part it should be rather smooth. Then you can combine cottage cheese, eggs and egg whites, milk and veggies in the medium mixing bowl. Add in garlic (I use an organic garlic hand mill that I got at the health foods store near me - its amazing!) and salt (I use sea salt - its the cleanest!). Stir mixture and then pour into baking dish. Bake for 25-35 minutes - I live in an apartment and have an electric stove so mine took 35 minutes to bake through, if you have a gas stove this could be different for you. When the quiche is cooked through it will have a light and fluffy texture and the top will be brown and sort of crusty. Let it cool a bit before you serve it so that the quiche has time to set up. then slice and serve. Makes about 4-6 servings Enjoy!
