Good evening and thank you for your well wishes I would like to say I'm feeling better but I would be lying! I have been to the doc's and also the osteopath and both have said to be off work tomorrow as I have to lay on my back and do some stretches every 15 minutes plus having to stand all day with no heating really wont do my back any good whats so ever. Oh I hate not working, as much as I dislike my job the thought of not going is not good plus it means no exercise!!!!! I know I know i must rest but you must know how I feel not doming it!? Ok rant over!

My breakfast was a real tummy filler so I wasn't hungry till around 1.30pm when I had some delicious sweet pot and butternut squash soup I made this morning. Oh my god this soup was so good! I teamed it with some rice cakes, vegan cheese and chive cheese and a little pesto mmmmmmmmmmmmm! I had room for a small pud so cut up some lychees and put them in some soya yogurt with a little cinnamon yum!

Sweet Potato and Butternut Squash Soup

I medium sweet pot
Half a butternut squash
1 onion
2 cloves of garlic
1 GF/DF/YF stock cube
seasoning

Fry onion and garlic in a little olive oil until browned then throw in rest of ingredients cover with water and cook for about an hour on a low heat. Whiz it all up and enjoy this tummy pleaser!

One good thing about being at home again was I managed to get quite a lot of my 5th assignment done which is good I should easily be able to finish it tomorrow maybe even get onto the 6th!

I went to my osteopath appointment at 7 and got snapped about a bit and like he said my back will feel worse before it feels better :( I am going back on Thursday so hopefully the rest along with lots of painkillers I should be back to normal soon (please god!)

Once I got home I was starving so chucked together a quick meal for dinner I had some rice noodles, steamed mangetout, broccoli, carrots and celeriac, anchovy stuffed olives and some left over mackerel in tom sauce. I added some curry powder and tomato puree to make a little more sauce. Oh yeah this was good and made in under 10 minutes hurrah! For afters I heated up an apple and topped with soya yogurt and toasted pumpkin seeds, perfect.

My back is starting to hurt form sitting down to long so I'm off to watch some TV in my heated bed before hitting the hay. I hope to wake a little less in pain tomorrow.
