PECAN PIE BAR COOKIES
This bar cookie is a sweet "cousin" of the pecan pie. In fact, it tastes very similar, but travels well in a lunch (or picnic) box and it's made out of ingredients that are always on hand, so it is one of those "go to" recipes that is guaranteed to please your family.
1 cup + 1 tablespoon all purpose flour1/2 cup dry oatmeal 3/4 cup brown sugar (packed) 1/2 cup butter (room temperature) 3 eggs 3/4 cup light corn syrup (like Karo) 1 cup pecan pieces 1 teaspoon vanilla extract 1/4 teaspoon salt With an electric mixer, mix together 1 cup of the flour, 1/4 cup of the brown sugar and the butter, on low speed until you get a fine, DRY crumbs.Press this into the bottom of a greased 9" x 9" baking pan. Bake this at 375 for 15 minutes (or until very light brown). The crust will only be partially baked. Beat the eggs, syrup, nuts, vanilla, salt, 1/2 cup of the brown sugar and one tablespoon of the flour until well mixed then pour it over the partially baked crust. Bake 25 to 30 more minutes. Let the bars cool in the pan and then cut into squares. NOTE: Mix up the egg-syrup mixture while the crust is partially baking. That way you will have it ready to pour over the hot crust and return to the oven immediately. NOTE: You can substitute one cup of coconut for the pecans if you like. related searches : Pecan
