Petai Berlada (Chilli Petai)

Dear Readers,

Alhamdulillah we meet again here. In this outing I am cooking a very simple dish called Petai Berlada (Chilli Petai). What inspired me to cook this dish. A blogger friend who recently wrote about Petai mentioned my name ..cough cough. Read more about it at Aku Sedang Bermimpi by Man Kucai. He wanted his readers to get the petai recipe from yours truly. So here we are. This dish is very quick to cook and quite delicious for the Petai fans. If you don't like or couldn't get hold of petai then you can just cook the shrimps without them :)

Here's the recipe:


Petai Berlada (Chilli Petai)
Ingredients:

1 cup petai (only the seeds)
600 gm prawns (shelled and clean. Marinate with tumeric and salt for few minutes)

Boil and pound coarsely the followings:
10 fresh red chillies
10 fresh green chillies
10 fresh green thai chillies

1 big onion (cut into rings)
4 cloves garlic (slice thinly)
1 in ginger (slice thinly)
2 lemon grass (bruised)
juice from 3 lime
1/2 cup nampla or fish sauce
or salt alternatively
1/2 cup oil

Method:

1) Heat the oil and fry the prawns for a minute or so.
2) Add the garlic,ginger,onions and petai. Stir for few minutes.
3) Add the chillies. Stir and put in the fish sauce,lime juice and tomatoes.
4) After stirring for few minutes add in the coriander leaves and spring onions.
5) Give a last stir and serve.
6) Bon appetit :)

Cooking is like falling in love. You have to go all the way or not at all. Its not only an art but it is also a science. We must not only know what ingredients to use but we must also know the chemical reactions therein. Knowing all these will give us the confidence to cook anything. Assuming we have a piece of meat that is not lean and would not be so tender when cooked. What do we do? Use some pineapple to marinate the meat and the meat will be tender. Why pineapple?..it has high acid content (perhaps malic and/or citric) which will tenderised the meat.
