Roasted Tomatoes, Spinach and Pesto Pizza

Dinner was Pizza! I love these Tandoori Naan Flatbreads. They make the best little quick pizzas. The kids went for plain Cheese Pizzas and I made Steve and I, Roasted Tomato, Spinach and Pesto Pizza. Wow! They turned out great and I thoroughly enjoyed it. I have to say if you are craving pizza but want to make it a bit healthier... this is the ticket.

Roasted Tomatoes, Spinach and Pesto Pizza

1 Tandoori Naan Flatbread
1 tablespoon marinara sauce
1/2 cup roasted tomatoes
1 cup baby spinach
1/4 cup of 2 % Italian Cheese Mix
1/2 tablespoon pesto sauce

Bake at 400 degrees for 8-10 minutes and Voila, you have dinner.

Roasted Tomatoes

2 cups of grape tomatoes, sliced
Pinch of both Sea Salt and Turbinado Sugar
Splash of Olive Oil

Roast for 45 minutes. Enjoy!



Tomorrow is D-Day....I will be picking up my sister's kids around 11:00am and keeping them entertained until we pick up the kids from school. They are so excited for a two night sleepover, one night at my house, and one night at their new house in Fort Worth. Oh so sad! This is moving weekend, so we will be off to Fort Worth to help move and check out the new 'hood.'

I am off to try out some crunchless ab exercises... they look really good and I want to try them out on my personal training client tomorrow.
