Roasted veggies
The hubs and I probably spent 20 minutes trying to figure out dinner today. He wanted to eat out, but neither of us could decide on a place to eat. I wanted to eat in. We even talked about a picnic. We ended up decided on a night at the house……dinner in and a movie. Scouring through the cabinets and fridge, I was at a loss at to what to fix. Tosca to the rescue…. In my trusty Clean Eating cookbook, I found a delicious looking recipe for summer roasted veggies. I didn’t have all the necessary veggies, so I just made do with what I had. Into a bowl went a cut up yellow bell pepper, orange bell pepper, red onion, 2 sliced garlic cloves, olive oil, rosemary, thyme, and sea salt I added them to a pan with 2 tomatoes and into the oven they went for 20 minutes at 400F I tossed them at 20 minutes and baked for another 20 minutes They came out smelling and looking delicious In addition to the veggies, I warmed soy bbq My bbq sandwich was made using 2 romaine leaves, topped with broccoli slaw, and bbq My plate: 2 bbq roll-ups, roasted veggies, and blue cheese baguette from my visit to the farmer’s market today. Time for our movie……The Bounty Hunter
