Rock Cakes
For those of you that have never heard of rock cakes before you may be thinking of cakes that will break your teeth or foot, if dropped, but stop right there! Think of a sultana scone's not as attractive cousin but every bit as lovely ;) They aren't as dense as a scone and more crunchier on the outside but, like a scone, they are simply delectable cut in half and spread with butter or eaten as is. These are perfect if you are short on time but feel like something sweet or you are having visitors and you need to quickly whip something up to have with coffee. Ingredients: 2 cups of self raising flour 90 grams of butter, chopped1/2 a cup of caster sugar1/2 a cup of sultanas1/2 a teaspoon of ground ginger1/4 of a cup of milk1 egg Preheat oven to 200 degrees celcius and grease a large baking tray or 2 smaller ones.Sift flour into a bowl and rub in the butter so that the mixture resembles breadcrumbs. Stir in the sugar, sultanas and ginger.In a small bowl, lightly combine the milk and egg then stir into the flour mixture. The mixture will come together as a stiff, slightly sticky dough.Place 18 even size heaps of mixture on the prepared baking tray or trays and bake in oven for around 15 minutes or golden.Remove from oven and cool on a cooling rack.Serve as is or split in half and spread with butter.
