Clean Eating, is my new favorite cooking magazine. It contains so many recipes, all healthful, but totally delicious looking! I love ethnic foods, and I was delighted to see that the current issue of clean eating had a feature on Greek food. The first recipe I made from the collection, was a spanakopita casserole. Now I love spanakopita. Spinach, delicate pastry, and cheese? How can you go wrong with that? Well... I'd never worked with Phyllo dough before, so that was an adventure of it's own. In the end the crust part turned out fine, though I learned that Phyllo needs quite a while to properly thaw, and it can NOT be worked with until it has thawed.
The end result, was while decent, a bit bland. I felt like it was overly spinach-y, and needed more cheese, salt, spices, something, to balance it out...I'll post the recipe if I find a modification that makes the recipe really work!
