That?s kinda fun

I was really adventurous this morning. I sweetened my coffee with a splash of nog!

And upon taking my first sip, I said out loud (to no one) That?s Kinda Fun!


I bought egg nog yesterday to make egg nog flavored buttercream frosting for a seasonal whoopie. But my first attempt didn?t go quite as planned. I thought I?d just make my basic buttercream and use nog instead of milk. But it wasn?t to heavy on egg nog flavor. So I added some nutmeg and cinnamon but it didn?t really work.


Now I?m kind of thinking maybe egg nog wont quite happen for this holiday. I?m sad but with my final on Thursday I just don?t have time to make a bajillion buttercreams this week.


Anyways whenever I buy things like Buttermilk, half & half, egg nog I always throw away some of it. I never get through the whole carton and it bugs me. Seriously, bugs! So I was super proud of myself when I looked in the fridge and thought of using my egg nog to sweeten my coffee. Give it a try! It?s delicious.


I?m taking the Special K Challenge!

I know you must be thinking What?


It?s okay I get that. I don?t really like diets in general but I have my reasons.

Cereal! But not Special K cereal Nature?s Path Cereal. I?m making the Special K Challenge My Special K Challenge by following the plan but mixing in my own foods here and there.

I?ve never been a cereal junkie, like some people out there. But I can do two weeks of anything! Cereal you will be my friend by the end of this.

Why I?m Taking the Challenge.

I have a super stressful week coming up. With the studying and exams, the million Whoopie Pies I have to make, and don?t forget the basketball games and practices, I?m officially stressed and out of time.


I have a problem with emotional eating and these next two weeks that fall smack in the middle of holiday season seem like the perfect time to hit some walls and fall off the bandwagon. So I?m going to try this approach and see how it goes. A little guidance to hopefully help me stay on track, and probably in some ways get back on track.


Plus I know a couple people to took the challenge and really liked it and I want to give it a whirl.


The Challenge

I went to SpecialK.com and picked a plan under the Special K Challenge tab. I chose the original. It was easy!


Then I picked my start date, today, and it gave me a two week plan including three meals and two snacks a day.  There is also a link to a shopping list for both weeks I?m taking the challenge which helps me see what I need to get at the grocery store and have in my house.


I?m not going to be following the plan exactly. I?m going to eat some of my own granola bars, not always the Special K variety. And I?ll probably mix in my own cereals and granolas. But I will be buying some of the Special K products.


My Grocery List for the Challenge

1 box Chocolatey Pretzel Cereal Bars


2 Boxes Honey Nut Cereal Bars


1 Box Low-Fat Granola Cereal


1 Box Original Cereal


1 Box Red Berries Cereal


1 Box Vanilla Crisp Cereal Bars


1 Box Multi-Grain Crackers


1 Box Chocolate Peanut Butter Protein Meal Bars


1 Box French Vanilla Protein Shakes


1 Box Strawberry Protein Meal Bars


Some of these things are expensive which is why I?m going to mix in some of my own cereal, granola, bar and cracker choices. Most of the cereals I already have in my kitchen are healthy and have similar nutritional values to the Special K variety, meaning they just aren?t Fruity Pebbles and Frosted Flakes, so why should I go out and buy 4 boxes of Kellogs cereal?.



Challenge Day 1 Meal Plan

I received an e-mail in my inbox telling me what to eat today. Super simple.


Meal 1: 1 serving of Original Special K cereal with milk aka cereal with milk


Snack: Chocolaty Pretzel cereal bar aka cereal bar


Meal 2: French Vanilla protein shake


Snack: 1 serving of Multi-Grain Crackers


Meal 3: Southwest Vegetarian Chili



I?ll be blogging about the challenge as much as possible with a recipe and update a day. I?m excited to give it a try. Also scary to notice that in 2 and a half weeks it?ll be Christmas!
