Three-Way Chili, a.k.a. I Put Guacamole on Everything
I made the decision at the grocery store yesterday that I was going to make chili this week. No big deal, just a huge crock pot full of my favorite chili recipe. I set it to cook last night around 10 p.m. and it finished cooking around 10 a.m. today and stayed warm until it was time to eat it. The chili came out exactly how I wanted it to, except the meat was a little dry, which is the curse of ground beef in the crock pot! Instead of doing my usual low-fat cheese and fat free sour cream topping, I decided to top it off with a little of the leftover guacamole from our salads last night. I was glad I did, mostly because I like guacamole… but also because the chili wasn’t QUITE spicy enough for my taste, and the guac was spicy. Why am i calling this three-way chili? Well, if you don’t know about 3-way and 4 way chili, you are missing out! Standard 3-way chili is beef chili served on a bed of spaghetti, topped with cheese and chopped onions. But I didn’t want spaghetti. And I didn’t have a spare onion to chop. So I did my own thing, and served my chili with cheese, sour cream and guacamole… ok, ok, it was just an excuse to eat guacamole. I admit it. I have a problem. ![]() I’m glad there’s a ton of chili left over, because usually, when I’m hungry but don’t know what I want, chili sounds good. Tomorrow night is the first of my “official” birthday celebrations, as I’m going out with some camp people, and I’m sure there will be some fun food photos. It’s also Water Balloon War day… small children + water balloons = massive amounts of screaming and fun! Camper quote of the day: “I went to my grandma’s house this weekend, and we went to the pool and I got tons of tattoos!
