Trine?s Perfect Pesto
I had this for din dins tonight, along with kale spouts and lettuce galore (shown below on Alissa Cohen’s book). I also used cabbage leaves to scoop up and enjoy the rest of my serving. The rest of the batch awaits me in the fridge! I think my recipe takes the best of all the other raw pesto recipes I’ve found so far. I love it – hope you do, too! Ingredients: 1/3 cup pine nuts 1/3 cup cashews 1/3 cup walnuts 1-2 cloves fresh garlic 1 tbsp nutritional yeast (optional, for that cheesy zing) 1 heaping tbsp miso, preferably dark 2 bunches/bags of sweet basil 1 bunch/bag of coriander leaves (cilantro) 8-12 mini tomatoes (the orange ones tend to be sweeter) Directions:
