Turkey Pesto Sandwich + Holey Donuts Giveaway

Good Afternoon!

It has been a great morning and I have been working on getting organized. I finally got some real sleep last night and it is truly amazing what a good nights rest can do for you.

We had a nice class this morning and when I came home I decided I needed to make homemade pesto with the basil from our garden. It is growing like gangbusters out there.

Basil Pesto
2 cups packed fresh basil leaves (2-3 bunches)
1/4 cup pine nuts, toasted
1/4 cup grated Parmigiano-Reggiano cheese
3 tablespoons extra-virgin olive oil
2 tablespoons water
2 large clove garlic, quartered
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper

Place basil, pine nuts, Parmigiano-Reggiano, oil, water, garlic, salt and pepper in a food processor; pulse a few times, then process until fairly smooth, or to the desired consistency, scraping down the sides occasionally.

Turkey Pesto Sandwich

1 French Meadow Hemp Bagel, toasted
2 oz. sliced turkey
Handful Spinach
Grape Tomatoes
1/2 tablespoon Homemade Pesto Sauce

Handful of baby carrots and a glass of lemon water completed this meal. If you have not tried French Meadow Bakery Hemp Bagels yet, pick them up at the store the next time around. They are really, really tasty!
