Everytime Chefanie Wambach comes to over to cook you can be pretty damn sure that she has some sort of root vegetables on her. In fact, Jason says when she walks in he can already smell the sweet potatoes that are to come. These roasted root vegetables are colorful, sweet, carmelized and perfect for the fall/winter months. They are a Wamby specialty and will be your new favorite too.

Wamby’s Roasted Root Vegetables
Serves 4
Ingredients
Sweet Potatoes
Carrots
Parsnips
Brussel Sprouts
Baby Potatoes
Good Olive Oil
Italian Seasoning
Salt & Pepper
Directions
Preheat oven to 350. Chop veggies into bite size pieces. Toss with Olive Oil and Italian Seasoning. Place in a Roasting Pan and Roast for 40 minutes.
