In a bowl, mix the goat cheese with honey and a bit of thyme.
Layer the 4 filo pastry sheets and cut them in half.
Take one half of the sheet, fold the rounded edge towards the cut edge, and place a tablespoon of the goat cheese and honey mixture at the end.
Fold the samosa by wrapping the sheet around the cheese to form a triangle. Continue folding the triangle until there is a bit of sheet left. Brush the remaining sheet with beaten egg to seal the samosa.
Place them on a baking sheet and drizzle olive oil over each samosa.
Bake for 8 minutes at 200°C (390°F).
