Discover a super refreshing summer recipe: raw marinated zucchini! They will be absolutely perfect as a starter, as a side dish or even to garnish your toast or your sandwiches for example. To prepare this fresh and delicious dish, use a vegetable peeler (or an adjustable mandoline, if you have one). Once sliced, we simply arrange them in a pretty dish and season them with a special marinade :-) The result? A super fresh, fragrant and slightly tangy vegetarian dish!

    Mix the oil, lemon juice and white wine vinegar in a bowl.

We recommend small or medium-sized courgettes, preferably from organic farming.

Of course! You can also prepare this recipe by grilling the zucchini before or after marinating them.

What can I use instead of fresh mint?
You can use fresh basil for example, or dried herbs like oregano!

What can I use instead of wine vinegar?
You can replace it with apple cider vinegar.

How long should I marinate zucchini?
At least 3 hours in the refrigerator for the marinade to soak up the zucchini.
