Almond pear tart, or the famous bourdaloue

If you love pears, you surely haven't missed one of the most classic recipes in French pastry: the Bourdaloue tart! The addition of pears will allow you to finish your meal on a note that is both indulgent and fruity. A way to avoid feeling weighed down by a dessert that is too rich ;-) The combination of almonds (both ground and sliced) will add a slightly crunchy texture that gives this traditional recipe its charm.

Line the tart pan with the pie crust. Prick the bottom.
Mix the softened butter with the sugar. Then add the eggs and mix well. Finally, add the almond flour and mix.
Pour this almond cream into the tart shell and smooth it with a spatula.
Cut the pears in half, then slice them widthwise while keeping their original shape. Arrange them nicely on the almond cream.
Sprinkle the visible cream with almond flakes.
Bake for 30 minutes at 350°F (180°C).
And there you have it, your almond pear tart is ready!
Observations
Using fresh pears: it's possible, just cook the peeled pears in boiling syrup (1 liter of water + 200 gr of sugar) for 15 minutes on low heat.
