- Remove coconut flesh from the shell using a knife; pare outer part of it leaving only the white section of the fruit.
- Rinse and shred the coconut using a grater be sure not to remove the juice.
- Bring water to boil in a saucepan and add all ingredients. Allow to boil for about 40 minutes on high flame.
- Remove small amount which will be used to decorate the top of the cakes then place it in another pot and color with food coloring of your choice.
- Stir both pots occasionally with a wooden spoon to let the sugar keep from binding too fast.
- When the brew starts to develop some consistency, remove by spoonfuls and place on a greased surface.
