1 Dry Coconut

1 libra granulated Sugar

1 tablespoon Grated Ginger

¼ teaspoonSalt

3 cups Water

1 teaspoon. Vanilla Flavoring

Food Coloring (Using color of your choice)


  • Remove coconut flesh from the shell using a knife; pare outer part of it leaving only the white section of the fruit.
  • Rinse and shred the coconut using a grater be sure not to remove the juice.
  • Bring water to boil in a saucepan and add all ingredients. Allow to boil for about 40 minutes on high flame.
  • Remove small amount which will be used to decorate the top of the cakes then place it in another pot and color with food coloring of your choice.
  • Stir both pots occasionally with a wooden spoon to let the sugar keep from binding too fast.
  • When the brew starts to develop some consistency, remove by spoonfuls and place on a greased surface.
