Grater Cakes or Shamsuku/Shammy
Preparation

Remove coconut flesh from the shell using a knife; pare outer part of it leaving only the white section of the fruit.

Rinse and shred the coconut using a grater be sure not to remove the juice.

Bring water to boil in a saucepan and add all ingredients. Allow to boil for about 40 minutes on high flame.

Remove small amount which will be used to decorate the top of the cakes then place it in another pot and color with food coloring of your choice.

Stir both pots occasionally with a wooden spoon to let the sugar keep from binding too fast.

When the brew starts to develop some consistency, remove by spoonfuls and place on a greased surface.
