Ingredients

• 1 Cup whole wheat unbleached flour
• 1 tsp baking soda
• 1/4 Cup peanut butter
• 1/4 Cup vegetable oil
• 1 Cup shredded carrots
• 1 tsp vanilla
• 1/3 Cup honey
• 1 egg

Banana Cream Cheese Frosting:

• 1 Ripe Banana
• 6 ounces non-fat cream cheese
• 1/2 tsp vanilla

Preparation

• Preheat oven to 350 degree Sift the flour and baking soda, mix in the rest of the ingredients. Spray two 4 inch cake pan with oil and divide half of the batter into each pan.
• Bake the cake for 12-15 mins until toothpick comes out clean. Cool the cake on a cookie rack.
• Mash the banana with a potato masher in a bowl. In another bowl incorporate the vanilla with the cream cheese.
• Fold in the banana with the cream cheese mixture. Refrigerate until ready to use.
