- First mix all purpose flour and baking powder and then swift it.Place Parchment Paper/ Wax paper in a 11"x 7" x 2" Rectangular Baking Pan and grease the paper with little butter and then keep the baking pan aside.
- Then take 1 1/2 cup of chopped pineapple whose juice have been squeezed out. ( You can either use your hand or coarsely grind in a mixer grinder and pass it through a sieve. ) .
- Mix 3 tablepsoons corn flour, 1/2 cup of pineapple juice and 1/2 cup of orange juice. nicely Make sure no lumps are formed. Then add pineapple pieces and 1/3 cup of sugar to that corn flour mix.
- And keep it in a low flame till it thickens. Make sure it doesn't stick to the bottom so continuous stirring is needed. When this mixture becomes thick remove from the flame and pour it to the baking pan evenly.
- Then preheat the oven to 350 degree Fahrenheit and place the rack in the center of the oven. Bring butter to the room temperature and beat it nicely using a electric mixer or a hand mixer for about 1 minute.
- Then add 3/4 cup of powdered sugar and continue beating it until it becomes fluffy. It may take about 3-4 minutes. Then add eggs one at a time, beating nicely after each addition.
- Then add grated orange rind, salt, pineapple essence, yellow food color and vegetable oil and beat it one more time. Finally add sifted all purpose flour and baking powder little by little and beating nicely after each addition.
- Then pour this cake batter evenly on top of the pineapple mixture and the smooth the top of the batter using an offset spatula.Bake in the preheated oven for about 20-30 minutes.
- Or until a toothpick inserted in the center of the cake comes out clean. Allow the cake to cool and then transfer it to an another vessel. If you want you can decorate with some icing.
