Chicken Masala Powder / Curry Powder / Kari Masala Thool, an important ingredient which i never forget to add in any non-veg preparations, let it be curry or fried recipes or even biriyani. This masala has got strong flavor so you can use only 1 tsp for preparing any dish. You can use this masala to marinate Chicken along with other ingredients like salt, turmeric and red chili powder & prepare Chicken Pakoda .
Since we have used red chilies here, you can reduce the amount of chili powder if needed. Garam Masala, Biriyani Masala, Curry Masala & Chicken Masala, all are similar except with the differences in few ingredients. And if you do not want to use Chicken Masala, then try adding Coriander Powder which also gives unique flavor to curry. Lets check the recipe,

Ingredients:
1/2 cup Coriander seeds 1 tbsp fennel seeds (saunf)2 tbsp cumin seeds (jeera)1 tbsp black cumin seeds (shah-jeera / caraway seeds)1/2 tbsp black peppercorn4 dry red chilies1/2 tbsp fenugreek seeds (vendayam)20-30 Curry leaves Method:
Dry roast curry leaves for a min on low flame till it turns crispy. Remove from the heat and keep aside.Dry roast red chilies till it changes its color a bit. Remove from the heat. Dry roast coriander seeds, fenugreek seeds, fennel seeds, cumin seeds, black cumin seeds and peppercorn together till nice aroma comes. Remove from the heat and allow to cool. Grind everything together to powder. Add salt to it and mix well. Store in an airtight container and use when needed.
Notes:
The other optional ingredients are turmeric, cloves, cinnamon stick, ginger root powder, garlic, mace, nutmeg and poppy seeds. Sometimes i also include these ingredients to prepare Curry Powder. Comments
